EGGPLANT SALAD

EGGPLANT SALAD

Today I baked some eggplants. I usually bake them, drain them and I put them in the cooler so when I want to eat them I just defrost them and transform them in a delicious salad. This is a easy recipe, it needs a small amount of time to be prepared. If you don't like mayonnaise you can choose not to add it. If you like onion you can add it in the salad. It can be served as a garnish or as an appetizer. I gladly recommend it to you because it is suited for every occasion. If you want you can use some vegetables to ornate it.

This values are estimated - for 100 g this recipe contains:

~eggplants- 3-4
~mayonnaise
~oil
~salt
~onion- 1 (optionally)

Preparation method:

STEP 1:
We must bake the eggplants on a grill or on a tray. When they are baked you must peel them and let them drain as much as you can because they contain a toxic liquid that is unpleasant at taste.

When you decide they are drained you must chop them very well. After that you must add salt and some oil and mix them together. At the end you add the mayonnaise , and if you choose to use onion you chop it and you add it in the salad.

GRILLED CHEESE

GRILLED CHEESE

I am tired to eat grilled cheese at a fast food or at a restaurant so i decided to make my own. Is easy to prepare and it takes a small amount of time to make it. You can serve it with meat and salad or with fried potatoes and salad but you must know that is quite nutritious served as it is. If you want to make it more special you can use corn flakes after you dredge it in breadcrumb, this way it will be more tasty and crispy. It can be served as breakfast or as lunch.

This values are estimated - for 100 g this recipe contains:
-Calories: 270
-Proteins: 12.5
-Lipids: 15.5
-Carbohydrates: 20.5
-Fibers: 0.0
Ingredients:

~cheese- 200 gr
~eggs- 2
~breadcrumbs- 5 spoons
~flour- 5 spoons
~salt
~pepper
~olive oil

Preparation method:

STEP 1:
First we cut the cheese in slices that are about 0.5 inch thick, we must do that because if they are to thin, the cheese will melt in the pan.

STEP 2:
We scramble the eggs with salt and pepper. If you want you can not add salt because the cheese is already salty.

STEP 3:
First dredge the slice in water (if you want you can use milk) then in the scrambled eggs after that in the flour and finally in the
breadcrumb. When you fish this processes we put the slice in hot oil and we keep them for 2 minutes for each side if you will leave it to much the cheese will pop out true the breadcrumb crust.

                                      I wish you good appetite!!!
